Might be a bit of a cheat, but could you do a scene where you have dimmer X at 90%, then put in a 200 ms pause, then 80% and a 200 ms pause, then 70% then a 200 ms pause. That should cause the lights to dim over a 2 seconds instead of instantly. You could play with the delay and the number of the percent too.
