What's the best way to turn a set of lights on a off between a given time. For example, I have a scene I'd like to activate at 5:45 and turn off at 8:15. I created the rule, tied it to the scene, and set a condition that it be between 5:45 and 8:15. The scene turns on when it's supposed to, but it does not turn off at 8:15.
I've been successful in creating 2 separate rules wherein one turns them on, and the other turns them off, but is there a way to use one single rule to fire both commands?

The easiest would be to do this using Scenes and triggers and avoid rules all together. You'll be creating two scenes; one with the lights on and the other with the lights off. Then flip over to the Triggers tab and add a new time trigger with your the appropriate time (either 5:45 or 8:15 depending on the scene).

That's helpful, but will I have to also create rules if I want this to work only on weekdays or weekends? It would be helpful if those checkboxes for days were also in the scene triggers or conditions.

Or even easier, if Weekdays and Weekends were added as options to the drop down on repeat interval.

You can add a "Day of week" condition to the scene conditions tab - it should do what you need.
